Pain au levain is leavened using a starter made from the natural yeast and bacteria found in the air and in grain. Such natural starters ("fermenters") date to antiquity and are distinguished by varying degrees of acidity. A trace of sour laces the natural fruitiness of Fervere's Pan au Levain, bread rich in subtlety and texture.
